Appellation: SAUMUR Chenin A.O.C.
Harvest in open boxes, sorted in the vineyard and cellar before vatting by conveyor belt. Pneumatic pressing with size separation. Fermentation in thermoregulated stainless steel tanks at a temperature of 18°C.
Aging on fine lees for 3 months.
Robe : pale yellow with golden highlights.
Nose : balance and complexity around citrus fruits (pomelo, orange peels).
Mouth : beautiful attack, orange peel, ample and creamy texture with a finish on ripe citrus fruits.
Food and wine pairing : as an aperitif, with fleshy fish, veal blanquette or goat cheese.
Maturing: in vats 3to 4months. Tight Filtration before bottling.
